Look at Ideal's website to see what white roosters they have available for sale right now. It might narrow down your possibilities.
I've never heard of anyone getting cornish X's added for warmth before. Obviously, I know that doesn't mean it wouldn't happen, but... They require such different care, it doesn't seem like it would be ethical to stick them in without telling you what they were.

They have California whites, Ideal 236's, white leghorns, white plymouth rocks, and gold & red sex-links. All of these babies will be light yellow and feather out white.
