"Oysters"

I don't mind store bought chicken, especially if it's on sale. I can't raise one of similar meatiness for $0.99/lb. But it is kind of sad to see the poor job they do on some of them. Missing wing tips or whole wings, not fully eviscerated, missing necks, etc.

Regards: "I find testicles in probably more than 25% of store birds I cook. Sometimes they do a really poor job."

I don't think I've ever seen them in store bought chickens. Where do you shop?

I find them all the time in all different brands. I cut up a lot of chicken, I raw feed my dogs and cats, plus for the people too. It is really not uncommon. I find them sometimes still attached to leg quarters too.

I'm with you I never find them in my area, and I usually buy chicken that is the "generic brand" from the regulars grocery store (unkess name brand is cheaper sometimes that happens) or from the local "generics only store" and I would think it would be more likely in the chickens I buy, sometimes I see lungs and other stuff (bits of skin fat etc,) but never the manhood.....

Given the processing age of your store bought chickens I imagine they are usually pretty small and could be easily overlooked.

I don't plan on butchering any mature roosters in enough quantity to report on the sauteed preparation. At least until spring. I have enough in the freezer and enough to be culled from our regular flock.

I did kill two mature roosters a few weeks ago but I smushed one teste(They are fragile), so i added the remaining three with the heart and gizzard to an omelette. I don't even like omelettes but with some fresh vegetables from the garden it was really good.

Awesome! I’m totally disappointed in myself for not trying this the last time I butchered roosters. I made it a point to show the DH the gigantic rooster testicals (they were freaking huge!) and I didn’t even think of eating them. The boys were New Hampshires, guessing about 16 weeks old and turning ornery...

I’ve always been an adventurous eater too and hate to waste anything. I’ll definitely post pics next time I butcher and cook up some rooster fries. The nice part is that you don’t have to wait for rigor to pass from those... ha ha!
