Painting the inside of an active coop?

We are in the process of putting an addition on our coop. What is the safest paint to use on the interior? I can paint the nest boxes and roosts outside the coop before they are put in, but I'm would like to paint the interior wall as well.
 
Any kind of paint except lead paint, but lead paint is only sold to municipal entities for highway and parking lot striping. After your paint dries, it will be safe.

I am assuming the fumes from drying latex paint would not be safe for chickens, correct?

Would "dry to the touch" be a long enough dry time? Or the "recoat" time? Or longer? TIA.
 
By dry, I mean cured. There shouldn't be any solvent left in the paint. Latex is faster drying, so I am inclined to use that rather than oil based. However, if this is a new coop and otherwise unoccupied yet, I would go with oil base for durability.
