Pasta with goat cheese & chicken

I am making pasta with goat cheese and grilled chicken tonight

1 Box of Rotini (or your fav pasta)
1 roll of goat's cheese Parmesan cheese
Half a large white onion 2 Tbls. garlic
One large package of broccoli flowerets
2 grilled chicken breasts
1 Cup of artichoke hearts rinsed and drained and halved.

Get that pot of boiling water going...saute some onions and garlic.
Grill some chicken breasts, how many depends on how much you like in your pasta. I grilled mine last night so it is ready.
Drop the Rotini in the water.
Cut chicken in bite size pieces and warm up in the skillet with the onions. I drain and rinse about a cup of artichoke hearts, halved and put in the skillet with the chicken.
A few minutes before the Rotini is done I drop in a couple cups of broccoli flowerets.
Put chicken mixture in a very large bowl, add drained Pasta and broccoli. Break up a package of goat's cheese into the bowl and mix well. Cheese will melt. Add some shredded Parmesan over the top and serve!! This can be chilled and served cold, too. Fresh baby spinach can be added when everything is put into bowl.
 
I forgot to add that I always use red pepper flakes in any of my pastas, due to preference of dh and myself. You can also add some diced tomatoes for color. Play with it and make it yours.
