I agree that the treatment given to those chickens prior to her saving them is awful, but if she truely cared about the treatment of animals she would not let Smithfield be part of her life. They are the largest slaughter house in the world and have many violations of human and animal mistreatment. Please research this. Human injuries from repeat motion, poor treatment of animals. The hiring of illegals who get arrested every night and sent back only to have Smithfield support their return. Smithfield has repeatedly thrown money at the feds and lobby to allow their poor business practices to continue.

Thank you for the prompt, I will write her a letter today, if anyone doubts my previous rant, PBS did an excellent story last night on food production, Monsanto, Smithfield, McDs, many corn growers are controlling our life and our families health.
 
Ok, stop now. I started this because I enjoyed her talking about her chickens but my thread is NOT going to be turned into an anti-smithfield thread or anything else like that. It's not for arguing, defending, trying to prove anyone wrong or right,, it's about her talking about her chickens and saying how much everyone should have their own. PERIOD.
 
I've made her fried catfish, fried chicken, heck, all kinds of her foods. I make some substitutions because I just can't eat some of the greasy things she does but they turn out great anyway!
 
I use her fried catfish recipe to make chicken wings. The wings spend the night in yellow mustard before being rolled in spiced flour. My wings are always in demand and nobody believes me when I say they marinate in mustard.

I love her "real food" recipes. She uses ingredients anyone can find or already have in the house. I stopped watching Emeril years ago because his ingredients are unrealistic for the common cook. "truffle oil???????" your kidding right?!?

I also like Rachael Rays' recipes for the same reason. Real people food, affordable people food.
