its nice to have the peice back in the flock after butchering the roos...i have 14 hens and now 3 roos after butchering 7 roos...at about 16 weeks old.. not bad size nice leg thigh combos and breast ... i remember now why i always cut up the heritage style..the cavity to get to the innards is so small you cant really get even 3 finger in there to pull out...so i always cut the leg thigh combo off then slit the bell skin and slic along breast to bend and break the back bone and all the innards come right with it... then the lungs and tubes pull right out...then cut the breast from the ribs and rinse well and done..just a thought for those that have yet to do this...the few birds that always stayed in the coop now come out a bit...and it was easy to keep the one roooster that always gets over the fence with the 6 0r7 hens and never picks on them just watches and leads them..black austrolop...the other two of these were meanies...and the one favourale roo never came out of the coop either so he stayed as no comp for the other roo..jeff
