Didn't do meat today, did a bunch mandarin oranges and some kiwi.

I was in the back of the house out of ear shot of the kitchen for most of them, but DH chuckled and announced each one, along with which number it was! LOL

Did I happen to mention he is eyeing up all roosters in the coop and threatening any and all behavior infractions with a 'trip to the canner' since having his first jar of canned chicken?

The only thing I would add to what Fisher Lady said is that, I have lost many freezer fulls of things in the past. I now refuse to rely on anything electric.

We had a freezer failure late last fall... THANKFULLY I found it before we lost much at all, though we did distribute some contents to friends and family to get it used since it had started to thaw.... most of it we were able to transfer to freezers of a family member who luckily had some spare room.
It took 6 weeks of fighting with SEARS to get the freezer finally replaced, 4 attempted repair visits before they finally replaced it (no wonder SEARS is having so many financial problems if this incident was their normal business practices) but anyway....
it was the final push I needed to get off of my butt and get out a canner. I used to can a lot of garden items, but found I was giving away more than using myself, between job and camp and fishing it was harder to keep a garden so I gave it up except for a few plants for fresh produce use. My schedule has improved so time to get back at it.
The chicken was a start, so now on to more adventurous items.... DH wants to try buying some cheap cuts of steak to cube and can to see if it would work for his steak salads, so that will probably be next on the list.
 
If hubby is willing to compromise on that steak.. I buy the big roast when they are on special and just cube them myself.. makes for a quick beef stroganoff when the meat is precooked.

We do have a generator, primarily to keep the water pump functioning and at least one freezer working, since we also have frequent outages on the ridge...
Canning the chicken was surprisingly easy, especially the raw pack method we used, I used to can spaghetti sauce and salsa, but honestly, it was a pain so now I would prefer to just do stewed tomatoes and make the sauce or salsa fresh if the mood strikes. I have a friend who always does a ton of different types of pickles, so can trade him for a few jars of those.


@ wingstone..... I have no problem with the roast instead of steak, in fact I frequently will buy a decent looking roast and cut it down for stroganoff or steaks for the grill (since I can cut them however thick I want)... I will have to round up some more pint bottles....

I was talking to my hubby about canning meat while driving to Harrisburg yesterday. I'm inspired by everyone on here doing it. I am planning on trying it the next time we butcher. I wasn't ready on Saturday when we reduced our roo flock from 9 to 3. Was so disappointed, my jersey giants (Dark Knight and the flying nuns) turned out to be all males and were fighting. It was causing mass chaos in the coop. So the Dark Knight remains with Iron Man (buff orp) and Fancypants Jr.
 
It looks like Fria is healthy again and ready to go back out to the coop tomorrow. She's been inside for a  though. Things have changed since she's been out. Her mama has only had 2 to look after and has moved then up to the roost at night. I'm nor sure if she'll welcome Fria back or not remember her. I'm also concerned about sending her back out into the cold. Any advice on this or am I overly concerned?
