Persimmons?

Persimmon cake sounds very interesting.

That cake sounds good.

Yeah. So I like the flavor of persimmon on their own; however, I have a bit of texture issues. So I usually eat about a spoonful or two of the persimmon by itself and then I just bake with it.

The one I make ends up being a tad like an apple cake, but with persimmon instead. It’s quite nice.

Since we are talking about uncommon fruit, if any of you get a chance to try a cherimoya, do it!!! They look crazy, but It is the most delicious fruit I have ever tasted. Imagine the taste of fruity pebbles cereal, but creamy.. Just like persimmons, you have to let them get squishy by letting them rest on the counter. But these you only need to get to avocado level of ripeness.

American and Asian persimmons are not related to cherimoya or hichaya.
I wish I could grow the latter two here but I can't.

Sure, the recipe is from Southern Living magazine. The only thing is they don’t have an icing for the cake, which is weird to me. So I usually whip up a glaze for the top, but I’m sure you could add any icing that you like or keep it plain.
