Pet Peeves

Not to derail but we have something called Spanich bread round here. It's amazing the bakery we get it at takes a round bread about 10" around and about an inch thick. It is brushed with butter then a layer of Spanish then a layer of mozzarella cheese. It's great yall ever heard of it round yalls way ?
Never heard of it before you mentioned it.

Yes but fried may be 'iffy. :lol: Might have to broil some or pan fry.

Grill it. To me it is better that way than fried and certainly better for you. I admit that I like to spray it with butter, though.

To keep it from sticking once your grill gets hot take a wad of paper towels and saturate with grilling spray, no stick spray, or you can even use spray butter for this as well, then rub your grate with it. I say a "wad" because you want it thick so not to burn yourself. Also, you have to do it fast to keep from burning yourself. Immediately put your fillets on the grate (the side that had to skin down). If you are not fast it will not work as well. You will again spray another section of the grill when you are ready to flip to the other side.

This works not only for catfish, but other types of fillets as well.

I like to season the fillets with my favorite seasoning before hand and as I said spray with butter before and/or during cooking.

Edited to add: If you want healthier catfish then get them from the river. The ones you get at the super market, though very tasty, are worse for you because they come from ponds on catfish farms. The feed they use to grow them out makes them not as healthy. I know this because I live in the middle of the catfish capital of the world. I have 100's and 100's of catfish farms around me. I have family that own catfish farms. I actually lived and worked on one for awhile. My family would not like me telling you that their fish is not as healthy for you as river fish lol but it is true.

I always found them a little fatty but they are effectively in a liquid feed lot.

My Dad tried to break into catfish farming in the late '60s. I must of walked half the farms in S. Mississippi and SE Louisiana looking for a place with him. Most were old Tung Nut plantations.
He traveled all over LA, MS and AR talking to fish farmers but could just never put the right deal together. I was in late High School and he asked if I would partner with him if he could start the business and I said I would. It never happened.
It brings back great memories though. Thank you.
 
How big of a home do you have that you go through 8 cords?!
I have a 1400sq ft bungalow. November to March temperatures are below freezing with lots of snow. Had several days in a row in January when temperatures were -35C/-31F with wind chill. So I burn through 10-12 cords but my propone furnace only ever comes on if I am away.
