Well I'd be dag bum!

My Amercuanas never came to that color! Mine was light sky blue to be exact and from Cree lines.

Here is how you do it. You were almost there.
Use a WHITE background. Doesn't matter if you need a flash or not, use it if you need it for the setting (such as indoors).
When you pull up the photo on your computer, use your photo program to adjust the WHITE portion of the pic to white. Your eggs will be true to color.
Try it with that second pic, you can easily see how the paper towel is off color.
