U.S. Metric Conversion chart

1 can(s) beets
1 cup(s) cider vinegar
1/2 cup(s) sugar
2 teaspoon(s) salt
2 bay leaves
4 whole cloves
1 medium onion, sliced into rings
6 large eggs

Directions

1. Drain liquid from beets into a small saucepan, reserving the beets for another use. Add vinegar, sugar, salt, bay leaves and cloves to the pan. Bring to a boil over medium-high heat, stirring occasionally, until the sugar dissolves. Pour the pickling liquid into a large deep bowl and stir in onions; set aside to cool for 1 hour.
2. Meanwhile, place eggs in a single layer in a saucepan; cover with water. Bring to a simmer over medium-high heat. Reduce heat to low, cover and cook at the lowest simmer for 10 minutes. Pour off the hot water and run cold water over the eggs until they are completely cooled. Peel the eggs.
3. When the pickling liquid is cool, place the peeled eggs in a 4-cup container; pour the pickling liquid over the eggs, then spoon the onions on top. (The onions should hold the eggs under the liquid.) Cover and refrigerate for 24 hours.
4. Remove the eggs and onions from the pickling liquid. Refrigerate in an airtight container. Serve the onions (which are also delicious on burgers) alongside the eggs, if desired.
 
I'm not a big fan of pickled eggs, but this looks like a GREAT recipe - Think I'll give it a try. Thanks for sharing!

I have never made any pickled eggs before but I think I'll give this a whirl! I am very envious of you living in Montana as well, how wonderful! I love Montana and Idaho both!!!
 
I am soooo glad you decided to share this recipe! A lot of people may not know just how good it is. My brother dearly loves pickled eggs.

I haven't tried that but I would think if you kept it refirgerated you probably could. Let me know if you try it. They are really pretty sliced in have on a relish try during the holidays. Lori
 
i just buy a gallon jar of pickles and the kids eat all the pickels then with the left over juice add hard boiled eggs,for spicy i add tobasco sauce.
 
I like making pickled red cabbage.After I eat that, I put eggs in the leftover "juice"
They turn purple..
Purple pickled eggs..hehehe
