Pickled Button Quail Eggs

How silly! There are 25 button quail eggs in the pint jar and a large fresh egg on top. I gave one to my house chicken to eat before pickling. They looked perfect inside. So neat!

I added the eggs to rapidly boiling water and turn the stove off and let the eggs sit in the super hot water for 10 minutes. Soak in vinegar overnight to dissolve the shell so that only the membrane remains. Remove the membranes, rinse and pickle. I use the juice from canned beets and white vinegar. I also add a dissolved cube or two of chicken bullion. If they were only for me, I would have added a hot pickled pepper to the jar but the family doesn't like the heat. That's it, nothing fancy. I like mine with a vinegar bite and not sweet. I use a 3:1 ratio of vinegar to beet juice. Thinking about adding a few pickled banana peppers...hmmmmm.....

Pickled eggs in beet juice was always one of my favorite treats as a kid!

I haven't had a chance to pickle any yet, but will soon. Have a good stack in the fridge. I've heard the older ones are easier to peel.

My last stash ended up deviled eggs for thanksgiving.

With only 5 hens it take a few days to get the stash back up. LOL!

have 2 more hens starting to lay and one more youngster that will soon. lol....

My Button started to lay, so I can add a few of hers in there too. :)
 
Beautiful! How long will they keep once opened? Or are they not sealed?

p.s. House chicken? As in - a chicken that lives in the house? Free ranges indoors? Do you have a thread/pics of that??
