Pickled Corn Question/Help?!?!

I dont think your weird. I would love to give this a try . Maybe you could set it into the crock then start checking it after a week. I would think if your fermenting the corn along the lines of saurkraut then a similar time frame would apply so start checking after a week or 10 days and just keep checking till you have it right. Then as soon as you do please send me the recipe!

Well I talked to my granny and she said she remembers it taking a couple of months, but I think it was more like one because as my great-granny would remove corn, she would add corn. I can send you the recipe I have now if you like, maybe we can keep track together on how long it takes?

It depends on how pickled you like it but generally we test at about 6 weeks but you can go longer. Make sure to put something kinda heavy on top to weigh down the corn under the liquid.
 
Ok here goes!
1 stone crock
1 piece of twine
one clean pillowcase turned inside out
12 ears of corn shucked and boiled for 8 minutes then plunged into cold water.
2 gallons of water
1/2 cup apple cider vinegar
2 cups canning salt
3 tablespoons sugar.
Add water, vinegar, salt and sugar to the crock and stir until it seems that everything is disolved.
Add corn to the pillowcase and tie with twine. Dunk the pillowcase of corn into the brine mixture and cover the crock with a heavy lid (great-granny used a plate and a rock). Set in a cool dry place. Once a week remove the lid and give the pillowcase a good swish to stir the brine and re-cover.
That's all I have. I just set my first batch tonight!

We shall see how long it takes to pickle. I think I am going to try the six weeks and see how that goes. She also said not to use cheesecloth because it lets some kind of slime get on the corn and the pillowcase doesn't.

Thanks for sharing this. The next time I see decent corn Im going to try this. Where did you get a crock big enough to hold 8 full ears of corn at a time?
