Hi there.

Here's a recipe for you.

BURDIE'S PICKLED QUAIL EGGS

Ingedients:

72 quail eggs
2 cups white vinegar
1 cup water
2 teaspoons all pickling spice
1 teaspoon salt
1 teaspoon sugar
1 teaspoon minced garlic
1 medium onion, diced
5 whole cloves
1 teaspoon whole pepper corns

Method:

1. Place eggs in heated mixture of 2 cups of vinegar and 1 cup of water.
Bring the mixture to a boil, gently stirring continuously. This ensures that the yolk will settle in the centre of the boiled egg. Scoop egg-shell foam off as it builds up (The vinegar triggers a chemical reaction that dissolves the egg shell, exposing the outer membrane).

2. Allow mixture to boil for 4 minutes. Thereafter turn off the heat, remove eggs and allow mixture to cool.

3. Rinse water/vinegar mixture through double layer cheesecloth. Repeat until water/vinegar mixture is clear. Prepare eggs by gently peeling off the outer and inner membrane.

4. Return clear mixture to pot and add the following:
2 teaspoons all pickling spice
1 teaspoon salt
1 teaspoon sugar

5. Bring pot to a boil, thereafter reduce to low heat and add the following:
1 teaspoon minced garlic
1 medium onion, diced
5 whole cloves
1 teaspoon whole pepper corns
72 quail eggs

6. Simmer mixture over low heat for 15 minutes. Stirring continuously to prevent burning.

7. Place eggs in the sterilized jar and top off with well mixed mixture.

8. Seal the bottle and place upside down to cool for 30 minutes. This is when you will notice any possible lid-leaks.

Dry off sealed bottles properly and refrigerate for 2 weeks.

Serving Suggestions

Pickled eggs can be served as a side dish or a standalone starter/snack.
Either warm or cold with a dipping sauce.
Pickled eggs are a great addition to a fresh salad.
Garnish with fresh parsley, coarsely chopped when served.
Pickled quail eggs can be refrigerated for 6 months—plenty of time to eat.

Hope you enjoy!
