PID Thermocouple problem

can anyone explain why my pid shows an incorrect temp reading? I have a MyPid T series and when I have the thermocouple hooked up it reads 163 out in the open air and if I switch the wires around it reads 138. I have it set to Fahrenheit on the pid. The thermocouple I have is an exhaust gas type k and reads 0-800*C. I put it in ice water and it’s not even anywhere close. K type thermocouple is what the pid Calls for. Any ideas?

I got my thermocouple problem figured out. I had to set an offset value. I’m running an auto tune on it now so it’s getting closer. Have to put a few more breather holes in at a few more fans along with another egg turner

I have the auto tune set up but it over shoots just a little. I have my target temp at 99.5 and it stays at 100.1-100.2. Any idea how to further adjust this pid to get it closer?
 
It was just a though. I tested the same PID in a cabinet incubator a few year ago with the pt100 sensor. It worked ok, but I could not get the .1 deg f accuracy and stability I can get out of the pricier controllers in my cabinets. If I remember correctly temps varied 1/2 deg f from the set point.
