Pie cherry recipes???

Hello~ I have been lucky enough to be offered a couple buckets full of pie cherries. We went and picked the first bucket today, and they are in the refrigerator and we will go pick the next tomorrow. I am new to all this wonderful fresh and delicious country produce and would LOVE to hear if anyone has anything tried and true for me to start with, with all of these wonderful cherries... Throw 'em on a pie crust w/ a little sugar 'n corn starch. Top w/a pie crust or a crumble... and cook 'til done!

My mom uses the pie cherries (tart ones, right?) every year to make pies. I have to have 'em w/ a crumble and ice cream though, to cut down on the tartness. She doesn't like anything sweet w/ 'em.. just loves the tartness.
