OK.

Here is the progress so far:

#1: Butter crust with brocoli and chedder

#2: Crisco crust with brocoli and chedder

#3: My egg crust with hot Italian sausage and grated parmesan

All have been filled with a mixture of 24 eggs and cream plus topped
with a sprinkle of bacon, parm, and parsley.

The oven is preheating. Woohooo

I made quite the mess.

Wow PC your quiches look nummy!! I am a huge fan of America's Test Kitchen, and the pie crust recipe in their cooking bible The Best Recipe is my gold standard.

for quiche!

This is my husband's perfect recipe:

1 1/4 c flour
1/2 tsp salt
1 tsp sugar

Mix these together. Cut a stick of butter into cubes and mix with dry ingredients using your fingers.

1 tsp of vinegar
1 egg yolk (preferrably a Silkie egg

)
2 tbsp ice water

Mix everything together with your hands. DO NOT USE A MIXER OR KITCHEN AID.

Chill for an hour. Roll out into pie crust and put in your pie dish. Add quiche ingredients and bake all together for 45 to 50 minutes at 400 degrees until set.

GOOD LUCK!

That is so interesting. That's the second suggestion for a little vinegar
too. I wish I read this before I put them all in the oven. 10 more
minutes to go.
