Plants?

Would you consider sugar snap peas? They grow fast, climb, have pretty flowers, and make delicious treats! I've never grown them around my chickens (as this is my first season ever raising chickens), but does anyone else have any thoughts?

Every part of the pea plant is edible. If you can keep the chickens from eating them to the ground... They don't like heat, though, so they're done in June around here which would make them useless for summer shade. You might try planting peas and then a vining squash, melon, or cucumbers for the warmer months.

I don't think Roses are toxic to chickens, but you might find them attracted to picking at the petals. They'll learn to stay away from thorns etc. I've been thinking about ornamental grasses alot for around my Run and maybe a couple of small raised beds of Herbs that are beneficial to chickens (and me!) near the coop. I'm totally excited for landscaping out my coop and run this summer.

Wisteria are awesome, but not sure how you're going to have it setup. The base gets very thick and bark-like. Now if you're talking about them growing along and then somewhere your chickens can roost toward the top of them, that'd work. Those vines go everywhere!
 
Step back from the wisteria! Beautiful to look at but can destroy everything in it's path. It's taken our wisteria 30 years but it has finally killed the mature tree it climbed. The wisteria migrated from a neighbor's house across the road. It's absolutely beautiful for about 4 days in May - providing we don't get a bad rain, which frequently occurs - but can be a nightmare to get rid of if it goes out of control.

I like the sugar-snap peas idea and may have to try it. Cucumbers might work, too. My girls aren't crazy about eating the leaves but sure love the cukes.
 
I am planning on planting a few rows of sunflowers around the edge of the fenced in run.
I imagine a mixture of Black oil & Giant sunflowers. With some pole beans and peas that can climb the fence and flowers. I am hoping that at least some of the beans stay just out of reach of the birds so I can snack on them too. I also plan on harvesting the black oil sunflower seeds and trying my hand at fodder. I can't wait to throw the girls a giant sunflower head! I will have a camera on standby for that.

I also imagine the neighbors will appreciate a fast growing flower that will help hide my coop. They are excited for the eggs, but I'm trying to be considerate here because I'm sure my mismatched ideas and recycled wood is sure to give them an eye sore. They have higher standards than I do where that is concerned. lol

I figured on planting one of my spreading roses (i.e. a climbing thug...if some gets eaten by my girls, then so be it). The rose will be on the outside of the run, and some canes will end up inside. I also will plant peas, nasturtium, and considering any other options to both shade, beautify, and feed the hens.
