Please help me with my home made incubator!

thermometer at same height as eggs was needed in mine. also i have to plug holes for frosty nights and open holes when cooking dinner.
 
I have the thermo/hygrometer at the same hight that the eggs will be,

. I've been attempting to keep the humidity at about 40, but it's been lingering at 39, and I'll add a tiny bit more water to try to get it up... I'm looking to add coturnix quail eggs when I can be stable for a little while.

Ok, so now I'm at 98.8-102.... YAY! (I think...) I added an extra hole, across the way from the fan, and it seems to have made a difference, plus, I plugged one of the holes in the top of the lid... however, my humidity won't stay up so I'll have to add a bigger pan...

Here's my fear... now that i have it stable, once I start turning eggs tree times a day, won't that mess up my temp and humidity?
