My quail flew away from me, and I got her, and her leg skin is kind of chipped off, and I can see her bone.
I don't know what to do
I am in tears, I would really appreciate if I could get some help.

Please post pictures if you can. You say "kind of chipped off" so is the injury small? Where is it located on the leg? Would you be able to bandage it? I would rinse the wound, ideally with a saline solution, wound cleaner, or vetericyn, dab a little antibiotic ointment (with no pain reliever) and wrap it with a small wound pad and some vet wrap, or similar bandaging.

She wont let me rinse it, or bandage it.
Will she die???
It is on her leg.
It looks like it does when some of your skin gets peeled off and you start to bleed

I really can't give much input without additional details. I haven't worked with quail, but with chickens I wrap their wings and body with a towel (like a burrito) to keep them still when I have to work on their feet. You can try that.
 
Probably not, but calm down, if you are calm the animal will be calmer as well. And make sure it gets cleaned and sterilized.
