We had fire ants when I lived outside New Orleans. I understand your concern but I don't know how much risk there really is from fire ants with chickens.
I didn't have chickens then but other people did. I really don't think it would be much of an issue, but you might contact your county extension agent, in the phone book under county government or on line, and chat with the agent about that.
Lots of people in Florida on this forum have chickens, many with coops on the ground. You might look up the Florida thread in the "Where am I? Where are you!" section and raise the question there.
