Could you let her set and incubate some at the same time? That way if hers fail you'll have back up chicks.

For my first broody hen, I wasn't sure she would set the entire time, so I gave her some eggs but also had a clutch in the incubator. Then when lockdown came around I gave her a few more while still reserving a few in the bator just in case. They all ended up hatching.

she is way to small! she is only a tiny bit bigger than a newborn banty chick!

Birds do not think like us. She will not remember you took her eggs. Do it at night, or take her and put her in a different cage when you clean her tank, when she comes back, the nest is gone. Birds live in the present, they don't remember like we do!
 
I know that Dylan remembers things, because sounds trigger her reaction. The garbage truck comes and Dylan barks. We do not have a dog, but Dylan remembers a dog she knew, who barked at the garbage truck. She remembers that when the garbage truck comes by, but she is not sad all the time missing her dog friend like we would be.
