Does anyone know the breed and sex of my grey chick?!? I'm thinking a polish? Also, what breed is my baby rooster? He has thick feathering on his feet.

She looks more like a Crested Legbar to me...Polish have more pronounced flounce even as younger pullets.

The other, it's hard to tell at the photo angle, but if he is indeed lacking beard, looks to be a Bantam Cochin, Mille Fleur pattern coming in. If he has a beard, then he is likely a Mille Fleur D'Uccle.

I'm not sure what your pullet is, though I'm thinking Polish mix. As for your cockerel, he is either a Mille Fleur Belgian Bearded D'Uccle (if he has a beard), or a Mille Fleur Booted Bantam (without a beard).
