I was wondering when do you hatch organic turkeys..to kill for Christmas day?

Organic or not doesn't matter. Heritage turkleys take at least seven months to fill out, while broad-breasted take 10 weeks to five months depending on how large you want them. (a 5 month broad-breasted tom would be a monster!!)

In six months my heritage turkey's could get as big as a 23 lb tom and as little as a 9 lb hen dressed. Most toms and hens at that time would weight in their teens.
