It's that time of year, we have ZUCHINNI everywhere. We just have 2 plants but we are loaded, our friends have been gifted with zuchinni and yellow squash and I can't keep up with it!

I have sliced it into slabs, seasoned and baked it, zuchinni fritters, zuchinni bread, zuchinni casserole and it's still piling up!

Please share your delicious zuchinni heavy recipes!
 
First recipe is about locking the car when you visit friends and fam 🤣 .....

But in a pinch to use up Zucs and Eggs = Zucchini Egg Bake. I use my Taco Egg Bake recipe below alot. All you do is modify it. Replace Taco meat with Sausage, Replace Taco Seasoning with Spicy Mustard, replace salsa and green chilli's with Zucchini and replace Chips with Bread crumbs or chunks.

Taco Egg Bake
1 taco seasoning packet
20 eggs
1 lb. ground beef
2 cups salsa
small can diced green chilli's
2 tbls. minced garlic
3-4 cups shredded cheddar cheese
3-4 cups crushed tortilla chips

Preheat oven to 400. In a skillet cook meat, taco seasoning per directions. Drain fat, transfer to 13x9 or 15x10 baking dish. Beat eggs in a bowl and pour into taco meat. Fold in cheese, chips, green chilli, salsa and garlic. Bake for approximately 45minutes or until a fork comes out of center clean.
 
Zoodles are used in my house as a pasta replacement occasionally. We freeze quite a bit for breads and muffins in the winter. I don't know what animals you have but my goats and dog love to eat zucchini, I will give one to the chickens once in awhile also. Then I also dehydrate some to powder down to add to flour.

Lol, so thats why people are spinning around and heading the other way when I see them 🤣 maybe they have enough zuchinni already too.

That sounds great as the taco bake and with zuchinni! I love flexible recipes.

Zuchinni flour 🤔 how do you use that?

I do need to grate some ans freeze it, winter stashes for zuchinni bread then are great.

Our dog is super picky, I know the chickens like zuchinni 🤣 they are so helpful.
 
No recipe, but sometimes I chop up zucchini and add to my fresh salsa. I just add however much I feel like. I also like to bake it after dipping in egg and parmesan. It's very versatile and you can add it to just about anything.

My mom does it raw on salads, I haven't done that myself yet.

My mother in law dipped some in egg and flour and friend it last year, really good, but... greasy and heavy on a hot day 🤣
