Please share your zuchinni recipes!

Never enough zucchini. If I was your neighbor I would hang off your fence waiting for it. LOL. My zucchini started out beautiful but the heat came on and killed them off mid growing. I did not get to freeze any. I love it sautéed with onions and garlic with Parmesan cheese. I have a sister-in-law who made zucchini pie with pillsbury biscuits that was delicious. You can also make zucchini fries in the air fryer. You can freeze them and reheat. I made them with Parmesan cheese and almond flour (to keep carbs down as I am insulin resistant) but panko would be good to use along with some Italian seasoning.

Lol, if you were my neighbor I'd be so happy to share with you! Years ago I had a neighbor who would come till up a big garden spot for me each year when he did his. I'd always plant the whole thing (way too much food for just me!) so he'd come over and pick whatever he found, he'd bring me goodies he'd raised too, we often had different veggies planted. He'd also take any excess and put together produce bags for anyone he knew was on a hard time. He was a wonderful old man.

What a great neighbor! The pie is great as you get to use the zucchini and your hens eggs. If you search for Pillsbury zucchini pie you will find multiple recipes. Same for air fryer zucchini fries.
 
My mom does it raw on salads, I haven't done that myself yet.

My mother in law dipped some in egg and flour and friend it last year, really good, but... greasy and heavy on a hot day 🤣
Yeah, I don't fry much of anything. Too hot and too wasteful all the way around. But, you could probably put it in an air fryer if you have one which is basically a mini convection oven.
I have eaten it raw on salads as well.
 
Also, you can de-seed and chunk up zucchini and can it in pineapple juice for mock pineapple. You can do that for mock apple pie filling also.
 
Zuchinni flour 🤔 how do you use that?

I do need to grate some ans freeze it, winter stashes for zuchinni bread then are great.

Our dog is super picky, I know the chickens like zuchinni 🤣 they are so helpful.
You can substitute zucchini powder for 1/3 of regular flour without any change except a slight green tint. It works really well!

Soft and Chewy Zucchini Cookies with Cream Cheese Frosting

Ingredients:
1 cup shredded zucchini
1 cup sugar
1/2 cup butter, softened
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
Frosting:

4 ounces cream cheese, softened
1/4 cup butter, softened
2 cups powdered sugar
1 teaspoon vanilla extract
Directions:

Preheat oven to 375°F (190°C).
In a large bowl, cream together the butter and sugar until light and fluffy.
Beat in the egg and vanilla extract.
Stir in the shredded zucchini.
In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
Gradually add the dry ingredients to the zucchini mixture, mixing until just combined.
Drop rounded tablespoons of dough onto a greased or parchment-lined baking sheet.
Bake for 10-12 minutes, or until the edges are lightly browned.
Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
To make the frosting, beat together the cream cheese and butter until smooth.
Gradually add the powdered sugar, beating until fluffy.
Stir in the vanilla extract.
Frost the cooled cookies with the cream cheese frosting.
Prep Time: 20 minutes | Cooking Time: 12 minutes | Total Time: 32 minutes

Kcal: 150 kcal per cookie | Servings: 24 cookies
