Soft and Chewy Zucchini Cookies with Cream Cheese Frosting
Ingredients:
1 cup shredded zucchini
1 cup sugar
1/2 cup butter, softened
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
Frosting:
4 ounces cream cheese, softened
1/4 cup butter, softened
2 cups powdered sugar
1 teaspoon vanilla extract
Directions:
Preheat oven to 375°F (190°C).
In a large bowl, cream together the butter and sugar until light and fluffy.
Beat in the egg and vanilla extract.
Stir in the shredded zucchini.
In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
Gradually add the dry ingredients to the zucchini mixture, mixing until just combined.
Drop rounded tablespoons of dough onto a greased or parchment-lined baking sheet.
Bake for 10-12 minutes, or until the edges are lightly browned.
Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
To make the frosting, beat together the cream cheese and butter until smooth.
Gradually add the powdered sugar, beating until fluffy.
Stir in the vanilla extract.
Frost the cooled cookies with the cream cheese frosting.
