Well I have found that the flavor on them is great, they can be a bit chewy. I have the same issue with my chickens. I think I let them get too old before going to freezer camp. All of my birds tend to be over 6 months before butchering.

But what I also found is that ground turkey is Amazing!!. We have Turkey and chicken burgers often and they are very good. As well as anything else you might use ground meat for.
