I love summer
and it always calls for nice cold beverages. I don't want to be constantly drinking sodas, and water, while it is refreshing can get a little tired. Thus I have been delving into the wonderful world of teas.
Yesterday I tried something I have been wanting to do for a very long time, find a use for all that mint! So I gathered the following:
about 7-8 cupts water
tea kettle
large glass bowl to hold all the water
three large tea bags
juice from 2 lemons
honey and sugar to taste
a large handful of fresh mint
*warning* the way I make this tea is very minty
, so if you don't like a lot you can reduce the amount of mint to just a few leaves.
1) Set the water to boil and wash the mint and pluck the leaves off the stem
2) Bruise the leaves by squeezing them in your hand like you would a sponge, this lets more flavor out and place them in the glass bowl
3) Pour the boiling water over the leaves and add the tea bags
This can be tricky, you will have to gauge how much tea/mint flavor you want. I didn't time it but it is pretty dark. The longer you let the mint sit the stronger that flavor will be.
4) Remove the tea bags and mint leaves when you have the flavor you want.
5) Add the lemon juice, honey and sugar to get it to the perfect sweetness.
6) If you don't like the little bits of lemon pulp or tiny bits of mint you can strain it out, I didn't, still just fine.
7) Serve nice and cold.
