Potato Soup

I call mine heart attack soup. You'll see why!

Fry 1/2 lb. bacon in your soup pot until crisp. Remove bacon, crumble and set aside.

Pour off all but about 2 Tbsp. bacon grease. Saute one chopped onion in the grease. Add 6-8 peeled, cubed potatoes and just cover with water or chicken broth. If I used water, I'll toss in a couple bouillon cubes. My husband hates the texture of celery, so at this point I add some salt, pepper and celery salt. If you like celery, add it now. Simmer until the potatoes are tender and add about 1/4 cup of cheez whiz - if you're like me, you think the whiz will ruin it, but actually it's really good in this. Add the bacon back in and milk until it's the consistency you want. Serve this with some home made rolls and it's heaven on earth - and probably a ticket to the real heaven soon, too!
 
I fill a pot 1/2 full of milk, with a little water in it (then it wont cook to the bottem of pan) then I cut up some potatos into one inch chunks. Cook them in the milk. They will thicken the milk again as they cook. As that cooks at a slow simmer, I add the left over baked ham. I add pepper and parsley, but not the salt untill I eat it. It takes very little ham to flavor the soup(1 big cup or so). I use the little bits that are left after my family eats the ham. This soup tastes best if left in the frig for a day. Then the ham as time to flavor soup.
 
Potatoe soup in my family was after a ham dinner, place ham that is left on the bone into a pan with 2-3 inches of water, turn on to bring to a boil, add diced potatos (chunks), turn down to a light boil, (if its going to rain or snow, you may need to add water)stirring often in covered pot. When Potato's are done, remove from heat, remove ham bone, pick remaining ham off and toss into potato saving out a few hunks till after you have mashed them. Add butter, garlic (cloves if you like in the begining), half and half (although I use 2% often- you know calories) to bring to the prefered consistancy. Toss in remaining chunks of ham, salt and pepper and garnish with a sprinkle of Peprika(sp). Yummy in the winter or a cold winter day.

A favorite in my family for generations has been the potato soup my grandmother ate during the depression.

Peel and boil until tender about 8 med. potatoes
Rinse in cold water so easy to handle, and cute into cubes.
Dump water and put potatoes back in pot
Cut 1- 2 onions in cubes, put with potatoes
Add about 4 hard boiled eggs, cubed
Cover all with milk and add a huge glop of butter or margerine
Salt to taste
Stir and heat until butter is melted
serve immediately. I always ate it plain as a child, but my kids like it when I spinkle it with shredded Cheddar cheese.

Simple and tasty, perfect when you are sick.
