We picked up our first 6 poults 5 weeks ago. Over time it has become more clear that one has a form of splayed leg- except the feet were normal and just the knee joints were splayed. She was doing fine for some time so we chose not to do anything (i know, rookie mistake). This morning she can't walk at all. I'm curious what the best course of option is. Should I try to add splints? Would it be most humane to put her down? Thanks!

It sounds like perosis, or slipped tendons. Which sometimes is genetic and sometimes from a vitamin deficiency. I would try adding some vitamins to their water to see if it helps, otherwise culling is the kindest thing if it doesn't improve.

I would check your date on your feed, sometimes feed can be old and it loses vitamins. Especially if you are feeding a game bird starter which sometimes doesn't move off the shelf quickly and bags get old. They might not be expired but just old.
