Excellent point Ruthster55. Even in the states there are strong markets where folks demand certain criteria for what goes into a Sunday meal. I had recently harvested 3 very large Pekin ducks and 5 Muscovy and was offered a handsome profit for one by someone who grew up eating ducks. Having been in the states many years this person wanted to relive some happy moments and was willing to pay for an animal that was pasture fed and pond raised. I gave them the fowl for free, but the market was certainly driven by a cultural preference.

We live in a rural area, but there is a poultry auction every week. While I would be very reluctant to buy anything, there is a significant market for live roosters by the Asian and Latino communities. If you take at rooster that is a year and half old or less, you will likely get 8-12 dollars per bird according to size, which are then taken and butchered by the buyer.
 
In many parts of Latin America (can't speak for all) it is indeed acceptable to purchase a live bird to take home and prepare from knife to (-feathers) to (-visceras) to meal. These aren't everyday meals, but more like once-in-a-while.

The live broilers are at the market as well as in the commercial chain. These are not CornishX. My marginal research suggests they may be Cobb Vantress or Aviagen Ross broiler hybrids.

The hearts, gizzard, feet, are all sold, including in styrofoam at the supermarket, and are usually used for soups separate from the bird. They don't go to waste.

Grocery stores have actual butchers. Maybe not everything is available every day, but if they have beef heart today, it's time to seek one's inner Julia Child.... :)
