Excellent point Ruthster55. Even in the states there are strong markets where folks demand certain criteria for what goes into a Sunday meal. I had recently harvested 3 very large Pekin ducks and 5 Muscovy and was offered a handsome profit for one by someone who grew up eating ducks. Having been in the states many years this person wanted to relive some happy moments and was willing to pay for an animal that was pasture fed and pond raised. I gave them the fowl for free, but the market was certainly driven by a cultural preference.
