problems hard boiling fresh eggs

The best thing I have found is baking soda. Set the eggs out to warm up if they have been in the fridge. Meanwhile, bring the water to a boil. Add about 1t baking soda. Lower the eggs in with a slotted spoon and simmer 10 min for smallish eggs, 12 for large. Drain and ice.

It also helps if you then come back and crack them and put them back into the ice water before trying to peel them.
 
One thing I tried once is to crack the egg all the way around the center. Use a spoon and gently scoop around the shell inside and I've gotten shell off in halves that way. We don't have salt in the house so I have to learn other ways.
 
I recently have been doing my eggs in the electric steamer. I do a doz. at a time. Set for 25 min. and sometime late put them in cool water. So simple I love it!

The reason fresh eggs are so difficult to peel is because the air bubble at the blunt end is small. As the egg ages the bubble gets bigger and spreads to cover more surface area of the egg, separating it from the shell.
I never knew how to get around this problem. I am looking forward to trying out all of these great suggestions!

Another thing you can do when you hard boil fresh eggs is....after they cool down, crack the shell and place it in a cool water bath (just cold from the tap). The water will seep along the membrane inside the shell. Leave them there for 30 minutes or so. Even a fresh egg will peel at the shell easily and not tear at the whites.

HI, I have a lot of eggs so always have a dozen that I hold back for a few weeks for boiling...........Then, no problem peeling.
Also, a friend of mine pointed out that if I am using them for salad or egg salad for sandwiches, they do not have to peel well.
She cracks them and takes the egg out with a spoon.works like a charm.
