I just gutted 12 ducks. The livers are very tender and tend to break into 2 pieces (livers are lobed) when pulled out of the body cavity.
If I had wanted them whole I would have been more careful, but at our house the livers are dog food. So I just grab everything and pull.
Unless the livers were actually disintegrating, it is normal for the livers on young birds to be fragile.
Dogs said "good". So no problem with them.
