Processed a turken. Some questions and thoughts.

Did our first turken today... surprisingly he wasn't that much easier to pluck. Because of his age (he's about 18 months) he didn't have a lot of pinfeathers, thankfully, like some of the younger ones we did today. But some of his feathers were huge and extremely difficult to pull out despite a good scald.

A few questions and thoughts...
1. When pulling out the older roosters huge feathers this snot like bloody goo would come out. What is that?
2. The biggest difference between the turken and other roosters we've processed is that the turken didn't have any HAIR. I was shocked the first time I plucked that chickens have HAIR in addition to feathers. How do you get rid of the hair, and is the hair a phenomena of younger chickens or all breeds but turkens?

How did the turken dress out meat-wise? Did it have a nice breast on it? I have a few young turken pullets and they feel to be better fleshed in the breast for their age than the wyandotte roo of same age.
 
My processing experience is extremely limited (3 to be exact). I have never seen chicken hair or feather snot. But, I have a couple more to process this week.....maybe I will get lucky!!
 
He was about a year and a half old and huge. Thick skin. We are going to coq au vin him at a later date. Easy to behead though cause it was easy to see the Target. He was very stoic about it too. Just seemed to accept it. The others fought and squaked. Maybe he didn't want to suffer through another maine winter.
