As a follow up, the roast chook last night was wonderful - not tough at all which had been my concern. Surprisingly DD (age 14) said she didn't think it had as much flavor as the store-bought chickens. DH said that's because the store bought are injected with extra flavor. Is that true? I was thrilled with the flavor and also that it was not greasy at all - very little fat. Crockpot chicken today....
