Wow! Just processed my first two birds...freind of mine needed to get rid of two Jersey Giant Roo's and I told him I would take em. Never done it before just watched a video or two from youtube. I am a pretty handy country boy so it wasn't a big deal, just very time consuming. I had ambitions of raising a meat flock of 50 this fall but I may cut that number to 25 for the first time. I need to refine and hone my process some more. I have both carcasses down to the skin, whole in an ice chest right now, waiting for rigor to pass and then I will smoke both of 'em.
