We had a 7 week old cornish down in the legs so we decided to go ahead and process him. He weighted out at about 4 pound 4 ounces and it took us about 15 minutes after setup to process him.

We had the water around 140 degrees and redunked once to get the rest of the pen feathers. This go round we use a big canner but that is not going to work when processing 20+.

He is now sitting in the fridge and will go to freezer camp soon.

Yummy! I just ordered my first meaties and they should be arriving tomorrow. I'm hoping it's a positive experience!

Let us know how he tasted when you eat him. We will be processing our first meaties in about 3 weeks.

Aaron,

Maybe we can sneak the chickens in and you will never notice.
