Processed some Jumbo Guinea

Yesterday we processed 10 Jumbo pearl guineas. We just skinned them to save freezer space, the age ranged from 6 to 10 months old. They are resting in the fridge now. Here is a pic of the leg 1/4's and breast fillets.

How do they taste Steve? I have never had Guinea and sold off most of my flock but after looking at that lovely meat I may be getting more next year!
