I am having my first batch of Cornish x's processed today. Can I put them directly into the freezer, or do I have to let them rest for a day in the refrigerator? Please advise!! Thanks!!

You do want to let the meat cool off before freezing. I soaked my meaties in salt water and ice overnight (butchered in evening). I'm told this helps draw out the blood. The next day mine went in the frig, and we started that evening packaging them whole and cut into pieces for the freezer. Worked into day three on it. Not sure I want to do 18 big meaties in one day again.

I have read you can let them "rest" in the fridge up to 7 days with no problem. I guess it tenderizes the meat more. I would wait 2-3 days at least.

My processor cools mine in Ice water for about an hour, then I drive them home and put in the freezer. I "rest" them after I defrost and before I cook. This way I only have one or two at a time taking up space in the frig. They come out great.
