Howdy all! I'm looking for information on the rules/regulations/requirements to process and sell meat in Texas. I know of the exemption allowed to small producers that harvest under 10k birds/year, which we would fall under. I'm just not sure exactly how to go about it and what all is required. I've been to the DHHS site a couple times, but it's pretty confusing to me. Nothing ever seems to just say, "do this, this, this and this"....LOL
