OK so please do not judge my butchering skills at this time, where the skin all went I don't know and like I said I now know how to cut and tuck the legs, so next birds will actually be pretty.
I am letting the birds rest and then I will debone and add to the juices in the crock pot for late supper. I assume if I would have left all that fat I would have more CHoooce as poppop would have said! (juice)
