Story's Guide to raising chickens has a great method of killing them, break their neck.
I tie the feet up with a rope and put the rope through an eye hook. Then get a trash can lined with a trash liner--have a sharp knife ready.
Next step is to get a broom, put the chicken down to the ground and put the stick in the neck. Using both feet step on the broom and at the same time pull up by the feet and snap the neck. Then lay the body down over the stick and keep pressure on the stick until it is dead.
Pull the carcass up and place it over the trash can and tie it off. Cut the jugular and let it bleed out.
The rest is in the guide you have but after they are processed they become food like in the store.

and this is another reason why I need to start now, I have those turkey in the bator. And after reading that most still have all they hatched from last year, it scares me, I will most def distance from them when they hatch! My oldest, Talyn hunts all the time and has no issues cleaning ducks and geese, maybe DH will come around if I ask TC to do it and the ego will kick in and he will jump right in. That's a terrible statement but true I would place a large bet on it! hmmmmmmm if only the kid would make his way home to do something for momma!I can't bring myself to kill them either Sally. I make JJ do it, then I can process them. Once it's dead it doesn't bother me. The only thing I can process still alive is fish & that's because I've been doing it since I was 7 years old. The fish can be flopping & carrying on & I just crack it across the top of the head with the knife handle to stun it & go to work. Chickens are a different story. Guess it's the blood. Fish don't really bleed. Chickens do. Maybe eventually I'll get past it. I even managed to process a roo that had a name, but he was mean & ticked me off so I was glad to see him gone. I was tired of getting bit & flogged. I have about 22 broilers & 2 turkeys out in the pen right now that we'll be processing in a couple weeks (the broilers anyway, the turkeys still have some growing to do). Bring your boys over & let JJ do the killing & I'll help you process them.

LOL, JJ had my kids watch our last bird we processed. Other than chasing them with the head afterward yelling "zombie chicken!!!" they were fine with it.
