No wonder you were freezing! I couldn't be out in that cold for more than a couple minutes with all the cold weather gear I own lol

This was our bird when we first brought him in and then all wrapped up. We used a 22 quart canning pot to scald this guy and could only do half at a time lol

Wow, really nice. How do you get the legs to look so tidy?? I followed advice on where to cut but I still ended up mangling the ends.

Crazy southie. My hands got kinda cold since I wasn't able to wear my warm gloves but other than that it was okay out there. Running water would have been SO nice though.

It takes some practice but once you find just the right spot to cut, it goes right in between the bones and snips the tensions. They come out smooth and neat. Another reason I typically do all the butchering around here. Hubby likes to just take the hatchet and coop of the legs. It irritates my OCD lol

Yes, I'm proud to be a southie (compared to you lol). I freeze enough here lol. I couldn't do it workout running water but I think I'd choose to go without than just above freezing water lol

The water I did lug out was nice and warm. No need to freeze if I don't have to.
 
That looks a lot like the Orpingtons I used to have, lot of leg, almost did not fit in the bag! That last pound was usually not worth it, I found. They were about 2-2.5 pounds at 16 weeks.
