Processing Quail Pictures- WARNING Graphic!

One question: How long in the frig to let rigor mortis come and go for quail?
I leave my chickens 3 days before they go in the freezer.

Actually not a taste difference but you do this to tenderize them.

Thank you! I had people asking me how to process them and all I could say was, "Um.. like a chicken, or like a partridge. Either cut the head off and pluck or stand on the wings and give the legs a good swift yank so the breast meat pops off. I think? I don't know." I've never processed quail. I'm a vegetarian, so I don't do processing. Now when people ask me, I can point them here.

(And before anyone gets in a twist, the veggie thing is a medical necessity, not a life choice. I liked meat, it just didn't like me.)
