Processing question

Im bringing my birds tmrw morning to be processed. I purchased shrink bags which i intend to use on all the birds keeping them each whole. How long should i let the birds "rest" before i package and then freeze?

X2 We usually let them rest for 2-3 days before packaging and freezing.

Thats what i figured. My fridge is going to be packed. Haha

We bought an older cheap refrigerator on craigslist for exactly that purpose!

Oh -- you can also rest them in coolers full of ice water, too. The important thing it to keep adding ice so that temperature stays 40 or below and to keep the chickens in plastic bags so the meat isn't soaking in water.
