Processing video review

All,
This technique is very different from anything else I've seen. Seems much easier, but there's no skin left on the chicken....Thoughts?

 
Ive seen it mentioned before in other processing vids.

id consider it viable method espeically if 1) you dont have a mechanical plucker and/or 2) were going to break down the bird into pieces anyway.
 
Those were some huge birds. That is how I process grouse, ducks, and pheasants when I go hunting.
 
I just used this method on four black broilers today, and it went great! I had never done this kind of thing before, and it took me maybe 15 minutes per bird. I highly recommend it. I would have liked to have the skin, but I didn't want to pluck by hand. The only thing I didn't like was that I had a few teensy feather pieces stuck to the meat. but I think that was my fault. This is a great, quick way to process chickens.
As far as the no skin on the bird goes; I think I read in another post where Miss Prissy suggested wrapping the bird in bacon to keep it moist while cooking. I think I will probably try that sometime.
