Properly freezing veggies! HELP!!!

There's a new edition of Putting Food By out. Of course, getting a used copy is cheaper, but there's a lot of new info in the new one. Great book (old and new)!

I just froze 30 quarts of sweet corn. We always boil it on the cob, just to where it is bright yellow and the sugars are worked up. Drop it in cold water.Then using a serated (sp?) knife slice it off and bag it. I love it when the corn comes off in a good long strip of 3-4 rows. I can't resist taking a few bites. Just like candy. I've never had any problem of it being mushy when I thaw it. It is a family favorite in the winter. But blanching has to be done just right. Too long in the boiler can cause a problem. The cold water stops the cooking process so make sure when you dump a new load that you have good cold water.
 
Going to have to see if the library has a copy of Putting Food By. Not allowed to go to the bookstore for a while. Doncha hate budgets? And I love way too many books to give em all a good home...

Going to try the corn on the cob and also storing some off the cob. I'm sure my peeps would love for me to do the off-the-cob thing so they can have a treat!

<sigh> Yeah, I get all these lovely e-mails from Amazon, Borders, barnes & Noble. All telling me the latest in books I will love. And I know I will love them, and want to love them right away. But instead I'm being good and getting them from the library. And often waiting WEEEEEKS (she wails). Once my DH bought me one of those books just to stop the whining about the wait

There'll be no wait on Putting Food By. They should have that for me next week. And if I like it I'll put it on my Christmas wish list!

My favorite chicken book came from the library. I kept it 9 whole weeks. And then a lady I work with got me the same book from Cracker Barrell for my birthday! It was pefect, because I was about to HAVE to turn it in. (Keep CHickens, by Barbara Kilarski)
 
I just finished 6 quarts of salsa and 14 quarts of snap beans with my purple skinned poatoes. Corn is looking bleak here. No rain in weeks.

wow, Miss Prissy, the rains must be going all around you? We have been getting heavy downpours on a weekly basis now. Luckily we didn't get the two straight weeks of rain the folks west of us did but it sure does look lush here. The brushy parts of the fields look like a jungle. First we had the ice storm that wiped out all the state's fruit, then rain on a reg. basis. My garden is really going to town. This is a fluke this year. Wish we could send you some rain.

Sure wish you could send some to TN, too. We're still 12" below normal. Had some showers, but nmot enough to do much. Just meant I didn't need to water for a day. My garden is really struggling. Getting more herbs than vegetables. Thinking I'll make potpouri and sachets for Christmas.
Buying a lot of corn from the farmers market for the freezer, though... Someone got enough rain!
