Yep, my eleven year old just became a boyscout. He did his crossover on his birthday. They gave him a great wall mount Arrow of Light. He was also a super webelo, meaning he got all 20 webelo badges. He has his second boyscout meeting tonight. I'm mighty proud of him too. Dh is the little one's den leader, and we're planning the spring campout. We're going to check out the campground this weekend, since we've never been there. I think we are in for the long haul with the scouts.
4 egg whites (save the yolks for the filling)
1 dash of salt
1/4 c sugar
1 8 oz bag sweetened coconut
Beat eggs until foamy, add salt and continue beating. Beat while adding sugar, until stiff peaks form. Fold in coconut. Press macaroon dough into greased pie pan, use remaining dough for macaroons. Bake at 350 until lightly browned, about 20 minutes. Cool
Filling:
4 whole eggs (one was a silkie egg)
4 egg yolks
2 1/4 cups of sugar
1 1/2 sticks of butter
3/4 cup lemon juice
3 Tbsp lemon zest (about)
Combine butter, sugar and lemon juice in a double boiler over simmering water, heat until all the sugar is dissolved, stirring frequently. Beat eggs until light and creamy yellow. Slowly add some of the hot syrup to the eggs stirring constantly, until about 1/2 to 3/4 of the syrup has been incorporated into the eggs, then return the whole shebang to the double boiler. Stir constantly until a rubber spatula will hold a swirl in the lemon curd. Stir in lemon zest. Cool. This didn't set up well this time so I recommend this step....
dissolve 1 packet unflavored gelatin in 1/2 cup water. Let sit 5 minutes, then add to lemon curd while it is still heating. Cool.
You can either put in in the crust warm or wait till it cools. We decorated it with whipped topping and the leftover macaroons, and sliced lemon.
This tastes sooooo good!!!! Obviously Sam needed help with the stove parts, but he grated and squeezed lemons, stirred, mixed and measure, and it was all HIS idea.
